I Scream for Cookies 'N Creme!

cookies 'n creme - a standard, delicious flavor that EVERYONE loves. especially me. i could eat a whole pint of cookies 'n creme ice cream all by myself... right now...

but i won't. because that would be slightly ridiculous (though not unheard of). instead, ill tell you how i whipped up a batch of cupcakes by the same name for the student led talk on the "color of love," for which i also made the white chocolate cupcakes with strawberry buttercream.  these were a hit - especially the little surprise at the bottom.

oreo-bottomed cupcakes (makes 30)
  • 1 box Duncan Hines Butter Fudge Chocolate cake mix (or any chocolate cake mix)
  • 1 cup sour cream 
  • 3 large eggs
  • 24 whole Oreo cookies
mix together the cake mix, sour cream, and eggs. before filling the cupcake liners, place one oreo inside each. then, fill each liner to about 2/3 full - the space taken up by the oreo leaves enough batter for 30 cupcakes instead of the standard 24. bake at 350F for 15-18 minutes. 


cookies 'n creme cheese frosting*
  • 12 oz cream cheese (1.5 blocks)
  • 1.5 lb powdered sugar
  • 8 crushed Oreos
  • 30 mini Oreos (optional)
cream the cheese in an electric stand mixer, then slowly sift in and mix the powdered sugar - its a lot, i know. you'll get over it. as for the oreos, i would hand mix them in (or mix slowly with the mixer). do not over mix!! they will turn out like mine did - a weird greyish color. if you want to stay true to cookies 'n creme colors, mix till its mixed and no more. after piping it onto the cupcakes, top it off with a mini oreo and serve. then watch everyone's face brighten up when they chomp down and find that cookie in full at the bottom! 
* now this is a lot of frosting - but i didn't skimp on each cupcake and therefore i was only able to frost about 24 of mine...so don't go too nutty when you frost, just sayin'.
